This is no light salad! At Defeat Diabetes, we like our salads rich and satisfying, and this is exactly what our Caesar Salad is.

Caesar Salad

With a creamy mayo-based dressing, crispy bacon, gooey eggs, and cheese - this is one easy meal that you’ll keep coming back to.

  • 4 eggs
  • 1 head cos lettuce, roughly torn
  • 200 g bacon rashers
  • 30 g parmesan cheese


  • 2 tbsp mayonnaise
  • 1 tsp dijon mustard
  • 4 anchovies, roughly chopped (optional)
  • ½ lemon, juiced
  • 1 garlic clove, crushed
  • salt and pepper, to taste


  • Heat a small pot filled with water and bring to a boil. Gently drop in the eggs and let them boil for 4 minutes. After cooking, plunge them in a bowl of room temperature or cold water to stop the cooking process.
  • Meanwhile, heat a pan over high heat and add the bacon, cooking for 2 minutes on each side. Drain on paper towels, then slice.
  • Prepare the dressing by combining all ingredients in a small bowl.
  • To prepare the salad, toss the cos lettuce in the dressing and serve in two bowls. Top with bacon, eggs and parmesan cheese.


This is a great way to use up leftover bacon from breakfast. And if you’ve prepped some boiled eggs, you can skip the egg cooking step and make the whole salad process even quicker and easier. 
Don’t love anchovies? You can leave these out.
