Greek Salad

This refreshing salad makes for a great quick lunch or side to a meat dish.

Ingredients
  
  • ½ cucumber diced
  • 2 tomatoes diced
  • 1 gem lettuce chopped
  • ½ cup Greek goat’s fetta diced
  • ½ cup kalamata olives pitted; halved
  • ¼ cup olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp oregano dried
  • salt and pepper to season
Instructions
 
  • Place the diced cucumber, tomatoes, lettuce and fetta in a salad bowl and toss lightly. 
  • Add the olives, olive oil, red wine vinegar, oregano and salt and pepper to season and mix well. 
  • Serve immediately.

Serve with: Just about anything!
