This classic salad is bursting with the taste of summer; juicy ripe tomatoes, salty olives, crisp fresh cucumber and creamy feta. No wonder it’s one of our faves!
- ½ cucumber diced
- 2 tomatoes diced
- 1 gem lettuce chopped
- ½ cup Greek goat’s fetta diced
- ½ cup kalamata olives pitted; halved
- ¼ cup olive oil
- 1 tbsp red wine vinegar
- 1 tsp oregano dried
- salt and pepper to season
- Place the diced cucumber, tomatoes, lettuce and fetta in a salad bowl and toss lightly.
- Add the olives, olive oil, red wine vinegar, oregano and salt and pepper to season and mix well.
- Serve immediately.
