Ingredients
  

  • 2 tbsp butter
  • 1 medium brown onion, diced
  • 4 garlic cloves, minced
  • 1 medium cauliflower head, cut into florets
  • 1 celery stick, diced
  • 150 g watercress
  • 200 g baby spinach
  • 4 cups homemade chicken stock
  • 1 cup full-fat milk
  • salt and pepper

Instructions
 

  • Heat the butter in a medium frypan over medium heat. Add the onions and garlic and saute for about 5 minutes until the onions are translucent. 
  • Add the cauliflower florets and celery and cook for about 5 minutes until golden. 
  • Add the watercress and spinach for about 2 minutes until wilted. 
  • Pour in the chicken broth and milk and simmer for about 5 minutes. 
  • Let cool for a few minutes before blitzing in a food processor until thick and creamy. 

Notes

Tip: Batch-cook and freeze the leftovers for a quick tasty lunch at arm's reach.
