Ingredients

  • 1⅓ cup almond flour
  • 4 tbsp butter, melted, plus ½ tbsp extra for greasing
  • ¼ tsp baking soda
  • ½ tsp salt
  • 1 tbsp monk fruit sweetener
  • 2 eggs, beaten
  • ½ cup dark sugar-free chocolate chips, or milk sugar-free chocolate chips; e.g. Noshu sugar-free chocolate baking chips
  • ¼ cup almond flakes

COOK MODE

Instructions

  • Mix all of the ingredients except the chocolate chips and almond flakes in a mixing bowl until well combined. You can use an electric mixer, mix on low speed for 30 seconds and then high speed for another 30 seconds, until it forms a moist looking dough.
  • Add the chocolate chips and almonds and stir gently into the batter or use your electric mixer on low speed for 20 seconds.
  • Line the air fryer basket with baking paper and grease with extra butter.
  • Scoop out one tablespoon of dough. It will be a little moist so keep your hands lightly greased with butter or olive oil. Roll the dough into a ball in your hand, then flatten slightly to make a disk shape. Place the cookie on the baking paper. Repeat until all the dough is used.
  • Air fry at 170°C/338°F for 5-6 minutes or until golden brown (watch so they don’t burn), then carefully turn the cookies to cook the other side for 5-6 minutes until golden brown.
  • Remove them carefully from the air fryer as they are more fragile than flour-based cookies. Allow them to cool on a wire rack before eating.

Notes

If you don’t have an air fryer, you can bake them in a hot oven at 170°C/338°F for 10-12 minutes or until golden brown.

You can store leftover cookies in an airtight container in the fridge for up to 4 days.
