What's a 'Chaffle'?

Chaffles—short for “cheese waffles”—have become a low carb sensation. This two-ingredient wonder combines eggs and cheese to make a savoury waffle that’s light, crispy, and extremely versatile. They’re a quick low carb alternative to bread and can be used for anything from sandwich bases to burger buns. Chaffles are particularly popular for their simplicity, and you can easily change up the flavour with different cheeses, herbs, or spices to keep things interesting.

Ingredients

  • 2 large egg
  • 250 g mozzarella cheese, grated
  • salt, to taste
  • Coconut oil spray

COOK MODE

Instructions

  • Preheat a waffle maker.
  • Crack the eggs into a bowl and beat well with a fork or whisk. Add the grated mozzarella and mix thoroughly. Season with salt.
  • Spray the waffle maker with coconut oil spray.
  • Spoon one quarter of the mixture into the waffle maker and cook for 2–3 minutes, or until golden and crisp.
  • Remove carefully and repeat with the remaining mixture to make 4 chaffles in total.
  • Allow to cool slightly before using as sandwich bread or burger buns.

No waffle maker? No problem.

    Frypan method (recommended alternative):

    • Heat a non-stick frypan over medium heat and lightly spray with coconut oil.
    • Spoon one quarter of the mixture into the pan and spread it into a round about 1cm thick.
    • Cook for 3–4 minutes until golden underneath, then flip carefully and cook for another 2–3 minutes until firm and crisp.
    • Repeat with the remaining mixture.
The texture will be slightly more like a savoury pancake than a waffle, but still sturdy and delicious.

    Oven method:

    • Preheat the oven to 200°C and line a tray with baking paper.
    • Spoon the mixture into four even rounds and flatten slightly.
    • Bake for 8–10 minutes until golden and set. For extra crispness, flip and bake for another 3–4 minutes.

    Sandwich press method:

    • Preheat the sandwich press and lightly grease the plates.
    • Spoon one quarter of the mixture onto the lower plate and gently spread into a round about 1cm thick. Avoid overfilling, as the cheese will spread slightly.
    • Close the lid gently without pressing down firmly. Cook for 3–5 minutes, until golden and set.
    • Carefully remove and repeat with the remaining mixture.

    Notes

    Storage:
    • Store in the fridge for up to 4 days. Reheat in a toaster or dry frypan to restore crispness.
    • They also freeze well for up to 2 months.
    Swaps:
    • Try cheddar, gruyère or a mix of cheeses for a stronger flavour.
    • Add 1 tbsp almond flour if you prefer a firmer, more bread-like texture.
    Creative additions:
    • Stir through chopped herbs, spring onion, chilli flakes or crispy bacon bits.
    • Use as a base for avocado smash, smoked salmon or a breakfast burger.
