Ingredients

  • 2 egg yolks
  • 2 tbsp stevia
  • 1 cup whipping cream, thick
  • 1 tsp vanilla extract

COOK MODE

Instructions

  • Preheat the oven to 180°C/356°F.
  • In a medium bowl whisk together the egg yolks with 1 tbsp of stevia until the mixture becomes thick and creamy.
  • Add thick whipping cream and vanilla extract and mix until combined.
  • Place mixture into two ramekins. Add to a baking tray and fill with water so that it reaches half-way up the side of the ramekin.
  • Place the baking pan in the oven and bake for 25 minutes.
  • Remove from the oven and allow to cool completely, topping with the remaining stevia and placing under a hot grill for five minutes until the sugar starts to caramelise and bubble.

Notes

Tip: You can buy stevia from Coles or Woolies.

Tip: To separate eggs, simply crack the egg on the side of a bowl in half, gently pry the halves apart, and transfer the egg yolk back and forth between the two halves, letting the egg white drip into the bowl. Repeat until you have just the yolk left in the one half.
