  • ½ small cos lettuce torn or chopped
  • 1 egg
  • 125 g haloumi cheese sliced
  • ½ avocado
  • ½ tsp sesame seeds optional

For the dressing:

  • 30 ml extra-virgin olive oil (⅛ cup)
  • 40 ml lemon juice
  • ¼ tsp salt


  • Add the egg into a saucepan of cold water and bring it to a boil. 
  • Turn the heat down so it’s a rolling boil and set your timer to 5 minutes. Remove the egg, run under cold water. Peel and cut in half.
  • In a separate bowl (or a jar) whisk the salad dressing ingredients together until emulsified.
  • Assemble the salad, starting with the lettuce at the bottom, and drizzle over the dressing. Retain any leftover dressing in a small jar in the fridge for future use.
  • Fry the halloumi slices in butter for 1-2 minutes on each side, until golden and melting. 
  • Top the salad plate with the halloumi, then avocado, half the hard-boiled egg and a sprinkle of sesame seeds.


Tip: Keep the extra half of the hard boiled egg and hard-boil a few extra eggs to keep them in the fridge for snacks, lunchboxes and salads during the week.
