No more eggs with toast, try stir-fried veg instead! Get creative with your leftovers by using whatever vegetables are in the fridge. If you love chilli, add some while cooking or serve with some sriracha sauce.

Ingredients
  
  • 1 tbsp coconut oil
  • 2 bacon rashers (omit if making a vegetarian version)
  • ¼ red onion
  • ½ medium carrot
  • ½ cup spinach raw
  • 2 large egg
Instructions
 
  • Add coconut oil to a heated frypan and cook the bacon for a minute. (Omit the bacon if you're making a vegetarian version). Add the chopped veggies.
  • Crack two eggs and fry them to the side if your pan is large enough, or cook them after the veg is done.
  • Serve the eggs aside or on top of your veggie hash if you’d like the runny eggs yolks to mix through your veggies.
