Zesty Goat’s Cheese Salad

Our recipe combines fresh plump tomatoes with tangy goat’s cheese to make the perfect side dish or quick lunch.

Ingredients
  
  • 2 heirloom tomatoes, large
  • 1 tbsp olive oil
  • ½ lemon, juiced
  • ½ cup Greek goat’s feta, crumbled
  • salt and pepper
  • ¼ cup basil leaves, fresh
Instructions
 
  • Slice the tomatoes in thick circles and arrange them on a plate. 
  • Drizzle with olive oil and lemon juice. 
  • Crumble on feta cheese. 
  • Add salt and pepper seasoning and sprinkle on basil leaves. 
Notes
Tip: Add rocket for an added peppery kick to the salad. 
 
Serve with: Perfect Roast Turkey, Pulled Pork, Slow Cooked Beef Brisket.
 
Note: You can also use beefsteak tomatoes if you can’t find heirloom tomatoes in the supermarket.
