Steak and Baby Potatoes

Prep time: 5 minutes Cook time: 20 minutes Serves: 1


  • 1 x 350g t-bone steak
  • 50g (½ cup) or 1 small low carb baby potato
  • ½ tbsp sour cream
  • 35g (¼ cup) broccoli
  • 35g (¼ cup) green beans
  • 1 tbsp butter


  1. In a pot of salted boiling water, cook the baby potatoes for 7 minutes. Add the broccoli and beans and cook for a further 3 minutes.
  2. Meanwhile, in a frypan, cook the steaks in butter for 4 minutes on each side (or to your liking). Let the steak rest for a minute after cooking.
  3. Meanwhile, drain the vegetables and add the butter, allowing it to melt and coat the vegetables.
  4. Serve with the buttery veg including a dollop of sour cream on your potato.

Tip: Low carb potatoes are available with only slightly more carbs than pumpkin. (Just don’t go over the top as the carbs will quickly creep up.)
