“It got to the stage where I couldn’t even sit in a chair for more than an hour, which is not a great thing considering I’m a writer. I was tired all the time, I needed to nap constantly and I couldn’t get through simple tasks without being out of breath.

It worried me because I’m only 30, and being so young, it was really hard to be diagnosed with a chronic and progressive disease. I just kept thinking I didn’t want this to be my life. I didn’t want this disease to follow me around forever.

After getting my results back and seeing my blood sugars so high, I knew I had to do something, but my dietitian had such a long waitlist. Luckily, as I’m such a proactive person, I decided to make the changes before seeing her. I researched the best diets for type 2 diabetes and came across low carb. After some more research, I decided to give it a go.

The results were almost immediate. My blood sugars came down so quickly, I wasn’t bloated after eating, and my memory is the best it’s ever been. I’m not tired to the point I was before, and I can concentrate through a working day.

I even look better. I have clearer skin, my eyes look brighter and the puffiness I used to have around my face is gone. Those physical changes have really shown me that “you are what you eat”.

What I’ve been most surprised by is how delicious low carb eating is. I didn’t want to give up certain things, like ice cream, so I found ways to have those little treats without the carbs.

Cutting out high carb food was definitely hard, but I knew what the effect it would have on my body. Remembering the physical effects of eating those foods stopped me from doing it the next time.

I think the thing to remember if you’re contemplating going low carb is to balance how you feel day-to-day right now, with how you want to feel. If you’re feeling sluggish and as though things can’t get any better, remember they absolutely can, and the benefits are so worth it.
