What does a dietitian eat for Easter? It's all about a good brekkie

You might remember Easter as being a time of chocolate, indulgence and maybe a few too many hot cross buns. But when we’re ditching the carbs, you might think indulgence is off the table.

That’s not the case at all! You can still enjoy indulgent food and keep to your low carb goals, which is what I am going to show you with my low carb Easter brekkie.

I always want something to keep me going through the day, and to stop me getting hangry and looking for whatever food I can get my hands on, which is why brekkie has to be my favourite way to start the day.

Keto Eggs Benedict with Smashed Avo and Salmon

Serves 4

Ingredients:

Hollandaise Sauce

I cheat at Easter and buy a supermarket one, just check the carbs per 100g are less than 5 grams. You can make your own! I really like this brand. You can buy it at speciality food stores.

Eggs Benedict

  • 4 small avocados pitted and skinned
  • 4 large eggs
  • 140 g smoked salmon
  • 1 tablespoon white vinegar
  • Sea salt 1/2 tsp

Method:

Hollandaise Sauce

Get a microwave-safe container. Place the hollandaise sauce in the container and then heat it in the microwave, about 20 seconds. Quick, easy and ready!

Eggs Benedict

  1. Place a saucepan with water on the stove and bring to a boil. Reduce heat to medium-low. Add the vinegar.
  2. Crack your eggs into a cup, one at a time, and gently slide each into the water. Stir the water in a circle to create a small vortex which makes the perfect poached egg. Cook for 3 minutes. Remove the poached eggs with a slotted spoon and place on a paper towel to rest.
  3. Cut the avocados in half and remove the stones and skin. Smash all of the avocado together in a bowl, with sea salt. Pile roughly one avocado onto each plate.
  4. Top each avocado pile with some salmon and then an egg, and top with a generous dollop of hollandaise sauce.
  5. Serve immediately. Yum!

Total carbs per serve 3 grams - less than one teaspoon sugar!

There you go, my little secret to a healthy Easter brekkie that will keep you full, is low in carbs and sugars and still tastes indulgent.
