Swap the mushroom or asparagus for any other veg you have on hand or happen to love. Other combos include cherry tomatoes, baby spinach and avocado. When the weather is warmer, pair bacon and eggs with veg that can be eaten fresh!

Classic bacon and eggs, but instead of toast, try veggies!

  • 2 large egg
  • 2 rashers bacon
  • 2 tbsp butter
  • ½ cup mushrooms
  • 4 spears asparagus


  • Fry bacon in a pan with some butter or other healthy fat until crispy. Place aside when done and retain the fat.
  • Fry the mushrooms and asparagus in the same pan. Add the eggs and cook at the same time if they all fit. If not, remove the vegetables and then fry the eggs to your liking (ensure the whites are set).
  • Add salt to the eggs and veg while cooking.
  • Serve with salt and pepper to taste.
