COOK MODE

Instructions

  • Bring a small saucepan of water to boil. Reduce the heat to a simmer and gently lower in the eggs. Cook for 61/2 minutes, then remove from heat and plunge into cold water to prevent them cooking further. Peel and set aside.
  • While the eggs cook, heat a griddle or grill over medium heat.
  • Lightly brush zucchini slices and broccoli with olive oil and grill for 2-3 minutes per side until tender and slightly charred.
  • Arrange the zucchini, broccoli, ham, rocket, avocado, tomatoes and goats cheese and eggs in a bowl.
  • Squeeze lemon juice over the salad, season with salt and pepper and sprinkle with black sesame seeds if using before serving.
