This recipe is built on the power of seeds which soak up liquid and provide a hefty dose of nutrition. Flaxseeds and chia seeds are both sources of omega-3 fatty acids, and are high in fibre too.

Notes
Low carb porridges can taste a bit “neutral” if you're used to oats or sugar. Here are a few other tweaks that keep it low carb while providing a flavour boost: 1. Add vanilla A few drops of vanilla extract makes a huge difference. Suddenly it tastes like a proper breakfast, not “health in a cup.”
2. A pinch of salt Tiny but mighty. A literal pinch brings all the flavours forward and stops that “cardboard” vibe. 3. A swirl of cream or coconut cream Adds richness and mouthfeel — also helps mute any earthy notes from flax or chia. 4. More cinnamon or mixed spice ½ tsp is very light. Try 1–1½ tsp cinnamon, or swap for mixed spice or nutmeg for warmth. 5. Add lemon zest Just a whisper — ¼ tsp. Brightens everything instantly. 6. Sweetener if you need it Not essential, but if you want more regular porridge vibes, ½–1 tsp of allulose or monk fruit helps segue into the low carb version. 7. Toast the coconut first If you want to get fancy, toasting the desiccated coconut for 1–2 minutes in a dry frypan adds a lovely nutty depth. 8. Stir through a spoon of peanut butter or almond butter Adds protein, richness and flavour. A real crowd-pleaser. Tips:

- If you are using frozen berries, add them to the bowl before placing them in the microwave. This way they’ll become warm and juicy.
- If you like a runnier consistency for your brekkie porridge feel free to add more milk. Our CEO also likes to add a sprinkle of salt, although it’s not for everyone!
- To save time in the morning, measure everything out into a jar the night before. You can even prep multiple serves in one go. This way all you need to do is stir in the milk, heat and eat!
