Easy Ham and Veggie Wraps

Ingredients
  

  • 2 silverbeet leaves, white stems cut off
  • 150 g leg ham, sliced
  • 1 tbsp mayonnaise
  • ¼ avocado
  • 2 pickles, finely sliced lengthwise
  • ¼ cup sprouts
  • salt and pepper, to taste

Instructions
 

  • Fill a medium fry pan with water and heat to bring to a rolling simmer. Hold the silverbeet leaves with tongs and quickly blanch in the hot water, holding beneath the water for 30 seconds, then flip and hold for another 20 seconds. Place on a paper towel or tea towel and allow the water to drain, and the leaves to cool to room temperature. Drain off as much liquid as possible by patting the leaves with a tea towel or paper towel.
  • To assemble the wraps, place the prepared silverbeet leaves on a chopping board and layer on the ham first. Spread on mayo and avocado. Season with salt and pepper.
  • Add the pickles and sprouts and carefully roll them up to form a wrap. You may wish to fold in the bottom to prevent any of the fillings from falling out.
