- 1 sprig dill, chopped
- ¼ tsp salt
Tomato-Onion Salad:
- 1 small red onion, sliced thinly
- 1 cup cherry tomatoes, halved
- ¼ tsp salt
- ½ tbsp extra virgin olive oil
COOK MODE
Instructions
- Prepare the marinade by combining all the marinade ingredients in a large bowl. Set aside.
- Place the chicken pieces in the marinade and stir to coat. Cover and chill overnight or for at least 1 hour in the fridge.
- Meanwhile, prepare the tomato and onion salad. Divide the red onion and cherry tomatoes between two bowls. Drizzle with olive oil, add salt and stir gently. Cover and set aside in the fridge.
- To make the tzatziki dressing, add all ingredients to a small bowl and stir to combine. Cover in glad wrap and place in the fridge until needed.
- Once the chicken has marinated, remove it from the fridge and thread 4 pieces onto each prepared skewer. Make sure the chicken pieces are pressed together and compact.
- Heat a griddle pan or your BBQ on medium heat and cook the skewers, turning regularly, until all sides are golden brown, about 30-35 minutes. (To check the chicken is cooked through, prise one piece apart in the centre. If it’s still pink, return it to the heat.)
- Remove from the heat and place in a tray. Cover with foil and allow to rest for 10 minutes.
- When ready, serve the skewers with the tomato-onion salad and tzatziki dressing on the side. Garnish with parsley.
Notes
These are great cold for lunch the next day!
- You can prepare and marinate 24 hours before an easy BBQ mid-week dinner.
- To make a yiros, wrap the chicken and tomato-onion salad in lettuce cups and drizzle with tzatziki dressing with feta cheese. Yum!
