- ½ tsp baking powder
- 60 g butter, melted
- 1 tsp vanilla extract
Caramel:
- 140 g butter
- 160 g erythritol granulated sugar
- 1 tbsp brown monk fruit sugar
- 350 ml pouring cream
- ½ tsp xanthan gum
Topping:
- 170 g chocolate, 85% sugar-free
- 2 tbsp coconut oil
- ¼ tsp sea salt flakes, optional
COOK MODE
Instructions
- Preheat the oven to 180°C/356°F and line a 20 cm baking tin with baking paper.
- Mix together the almond meal, erythritol and baking powder in a medium bowl. Add the melted butter and vanilla extract and stir well to combine.
- Firmly press the shortbread mixture into the prepared tin and bake in the oven for 15 minutes until golden. Remove and set aside to cool completely.
- Make the caramel by heating the butter in a heavy-bottomed saucepan, then whisk in the erythritol and monk fruit. Continue stirring until the sweeteners dissolve.
- Add the cream and bring to a boil. Reduce the heat and stir continuously for 15-20 minutes until the mixture thickens and turns caramel-like. Add the xanthan gum and whisk to further thicken the caramel. Once a good caramel consistency has been achieved remove from the heat and allow to cool for 10 minutes.
- Pour the cooled caramel mixture over the shortbread and spread to cover the base. Place in the fridge and allow to cool for 30 minutes.
- Place the chocolate in a microwave-safe bowl and microwave on high for 30 seconds until the chocolate has melted. Remove and whisk vigorously until smooth.
- Add coconut oil and whisk again until glossy and smooth.
- Pour the chocolate over the caramel and set in the fridge for about 30 minutes or until set. Sprinkle with sea salt.
Notes
