Juicy Greek Chicken & Fetta Bake

A one tray bake that seems way too easy for such a delicious meal. All you have to do is put everything in a tray, place it in the oven, kick your feet up and let the oven do all the hard work!

  • 2 tbs olive oil
  • 2 garlic cloves, crushed
  • 1 tbsp oregano, dried
  • 300 g chicken thighs, (approximately 3-4 thighs)
  • 1 capsicum, sliced
  • 1 red onion, quartered
  • 1 cup cherry tomatoes
  • ¼ cup kalamata olives
  • 70 g greek fetta cheese, (hard)
  • salt and pepper


  • Preheat the oven to 180C, and place on the grill setting if your oven has one. 
  • In a small bowl combine the olive oil, garlic and oregano. Season generously with salt and pepper. Set aside. 
  • Place the capsicum, onion and chicken in a large roasting dish in a single layer. You don’t want anything sitting on top of anything else. Pour over the olive oil mixture and coat the vegetables and chicken. Disperse the tomatoes in the dish.  
  • Place in the oven to bake for 25 minutes, then remove the tray and sprinkle over olives and fetta. Season with salt and pepper and place back in the oven for 5 minutes. 


This recipe works with both skin-on and skin-off chicken thighs. If you are using skin-on, make sure the skin side of the chicken is on the top, and keep the dish up high in the oven to allow that skin to get nice and crispy.
