Lemon Butter Baked Cod

This rich, buttery cod is a real crowd-pleaser, perfect for entertaining when you want to impress (without spending all day in the kitchen!).

  • 2-3 cod fillets, about 300 g total
  • salt and pepper, to season
  • 2 lemons, 1 sliced into rounds, the other for zesting and juicing
  • ¼ cup butter, unsalted, melted
  • 1 tsp paprika, smoked
  • 1 punnet mini Roma or Solanato tomatoes, halved
  • 2 tbsp parsley, finely chopped


  • Preheat the oven to 200℃/392℉.
  • In a small bowl, combine the zest of 1 lemon, ¼ cup of lemon juice, butter and paprika. Pour half the mixture into the bottom of a baking dish, retaining the rest.
  • Season the cod with salt and pepper and place in the baking dish. Scatter the tomatoes around the fish, then pour over the remaining lemon butter mixture.
  • Place the baking dish in teh oven and bake for 17-20 minutes, depending on the thickness of the fillets.
  • Remove from the oven and serve garnished with chopped parsley, lemon slices and pan sauce.


Serve with a green salad, asparagus, zucchini or broad beans - whatever fresh veg is in season!
