Ingredients
- 2 tbsp butter, melted plus extra for greasing
- 1 tbsp heavy cream, plus more for serving
- 1 large egg, whisked
- 2 tsp cinnamon
- 2 tsp mixed spice
- 1 tsp Allspice
- 2 tbsp monk fruit sweetener
- 100 g almond flour
- 1 tsp baking powder
- 1 tsp cacao
- 100 g carrot, grated or shredded
- 50 g blueberries, frozen
- 50 g cherries, frozen, pitted
- 40 g walnuts, chopped
- 1 tbsp orange zest
COOK MODE
Instructions
- Butter a 2-cup, microwave-safe mixing bowl (glass or ceramic, around 17 cm diameter).
- Whisk the melted butter, cream and egg in a large mixing bowl.
- Mix the cinnamon, spice, Allspice, monk fruit sweetener, almond flour, baking powder, and cacao in a separate bowl.
- Add the dried spice mix to the egg mixture and stir to combine well.
- Add carrot, blueberries, cherries, walnuts and zest. Stir to combine.
- Pour the mixture into the prepared microwave-safe bowl and microwave on high for 5 minutes. Use a toothpick to check it's cooked - if it comes out clean, it’s done, if not, cook further in 30-second increments to avoid overcooking.
- Serve warm with a generous dollop of double cream if desired.
Notes
You can swap any preferred nut instead of walnuts or use frozen strawberries or raspberries instead of cherries. Be sure to add the fruit frozen, as defrosting them can cause the pudding to go soggy! You may add Lakanto icing sugar as optional.
