Ingredients

  • 5 eggs, yolks and whites separated
  • ½ cup monk fruit sweetener baking blend
  • 2 tbsp lemon zest
  • 1 tsp vanilla extract
  • ½ cup unsalted butter, melted
  • 1½ cups almond meal
  • 1 tsp baking powder
  • 1 tsp white or apple cider vinegar
  • 2 tbsp lemon juice
  • 2½ tbsp monk fruit icing powder

COOK MODE

Instructions

  • Preheat the oven to 180°C/356°F fan-forced and grease a 21cm loaf tin with a little butter.
  • In a medium bowl add the monk fruit extract, lemon zest, vanilla extract and butter to the yolks and beat vigorously to combine.
  • In another bowl, combine the almond meal and baking powder. Fold into the egg yolk mixture until well combined.
  • Whisk the egg whites with an electric whisk on high power for about 5 minutes until stiff peaks form. Add the vinegar and whisk on low power for a few seconds; don’t overwhisk the mix! (The vinegar helps stablise the egg white mix, giving the cake more lift!)
  • Gently fold one-third of the egg whites into the almond meal mix until combined. Add another third and lightly fold in, and repeat with the remaining egg whites.
  • Pour into the prepared cake tin and bake on the top shelf of the oven for 25-30 minutes until springy to the touch (or insert a toothpick - if it comes out clean, it’s cooked). If the top starts to brown too quickly loosely cover it with tin foil.
  • Remove from the oven and set aside to cool. Unlike a traditional sponge, this cake may sink slightly on cooling.
  • Meanwhile, prepare the icing by mixing the lemon juice with the icing powder. It may seem a bit runny, but it will thicken when poured.
  • Once the cake is cool, remove it from the loaf tin. Prick the top of the cake all over with a skewer to allow the icing to penetrate, and then drizzle with the icing mixture.

Notes

Store in an airtight container in the fridge for up to a week.
