Simple Asparagus Omelette

Ingredients
  

  • 1 tbsp butter
  • 1 bunch baby asparagus, halved
  • 1 cup baby spinach
  • 4 eggs, whisked together
  • salt and pepper
  • ¼ cup parmesan cheese grated

Instructions
 

  • Melt the butter in a medium frypan over medium heat. 
  • Add asparagus and cook for about two minutes until tender. 
  • Add spinach and cook for around a minute until wilted. 
  • Add seasoning to the eggs then add to the pan. Swirl them around the pan until the mixture evenly covers the veggies. 
  • Cook the omelette for about 3-4 minutes until it begins to set. 
  • Add parmesan cheese. Place a lid on the pan for around 2 minutes until the eggs are set and the cheese is melted. 
  • Take off heat and serve.

Notes

Tip: If you like your omelette gooey in the centre, leave uncovered in step 6 and instead simply fold in half and serve.
