Sweet Chocolate Mousse with Berries
A rich, creamy chocolate mousse to satisfy sweet cravings.
Ingredients
- 100 g cream cheese at room temperature
- ½ cup thickened cream
- 1 tsp vanilla extract
- ¼ cup monk fruit sweetener
- 2 tbsp cocoa powder
- 1 pinch salt
Garnish:
- 1 cup blueberries
- ½ cup tickened cream, whipped to serve
- ¼ cup chocolate, sugar-free; grated
- mint leaves, optional
COOK MODE
Instructions
- Beat the cream cheese in a large bowl with an electric hand mixer until light and fluffy.
- Turn the mixer to a low speed and slowly mix in the thickened cream and vanilla extract. Add the sweetener, cocoa powder and salt and blend until combined.
- Turn the mixer to high and mix until light and fluffy, 1 to 2 minutes or more if needed.
- Divide the mousse into 4 glasses, smooth over the top of each dessert with a spoon, and refrigerate for one hour.
- Before serving, garnish with blueberries, whipped cream, grated chocolate and a mint leaf.
Notes
If your cream cheese is too cold it will form around the beaters, so you might have to occasionally turn off the mixer and scrape the cream cheese off! This can be made the day before and covered with cling wrap. For a twist use different flavoured extracts in place of the vanilla such as peppermint for a mint choc hit or orange for a jaffa flavour! To make it FODMAP friendly, swap the cream to coconut milk cream, and the blueberries to strawberries.
