  • 2 medium-sized tomatoes, ripe and quartered
  • ½ small red onion, thinly sliced (or brown onion)
  • ¼ cup parsley leaves, fresh and finely chopped
  • 1 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • salt and black pepper to taste


  • In a medium bowl, combine the diced tomatoes, sliced red onion, and chopped parsley.
  • Drizzle the olive oil and lemon juice over the salad. Season with salt and black pepper.
  • Gently toss the salad to evenly distribute the ingredients and dressing. Serve immediately.
