"Many years ago, I was diagnosed with pre-diabetes with an HbA1c of 6.1. I went on a strict low carb diet and got my HbA1c under 5, meaning I was no longer considered as having pre-diabetes. I loved the weight loss aspect and the general feeling of wellbeing following low carb, so I continued eating this way for around five years.

"Amid the COVID pandemic, I relocated to Broken Hill for my work as a community midwife and immuniser. I was so immersed in helping others that I didn't notice old habits creeping back. But, in a matter of months, I became a full-on carb addict again.

"In June 2021, I felt pretty ordinary. I was suffering from headaches and constant tiredness. A routine check-up returned my HbA1c at 11.1 - well over the threshold for type 2 diabetes. When the doctor put me on medication, I just felt like I'd let myself down. I've found the information is presented in a really useful way, and it's helped me re-educate and validate what I already knew about low carb. I've watched all the Masterclasses and often go back and watch them again! I like looking at the recipes, but to be honest, I usually keep things pretty simple with meats and salad, steak, bacon, eggs and some cheese. I only eat 1-2 meals a day because I'm just not hungry. I no longer look for carbs.
